Let's make it;
Ingredients you'll need:
500g Juicy tomatoes
2 Large onions
2 Bay leaves
Salt and sugar to balance the taste
Water
How to make:
- Heat oil in a heavy bottom tall pan and drop in two bay leaves, chopped onions, and garlic
- Fry until onions are soft. Do not brown them
- Now add chopped tomatoes all at once
- Give a good stir
- Cover and cook until tomatoes are soft and juices run out. 5-8mins cooking time is enough
- Then pour water above the tomatoes. Cover and cook for 15mins
- Now the tomatoes are mushy and cooked thoroughly. Leave to cool for about 3/4mins
- Pour into a blender and whiz at high speed
- Pour all into the same pot again
- Add 1/2cup or a bit more water
- Simmer gently for 10mins. Do not close the pan with a lid
The soup is ready!
- While simmering add salt and sugar to balance the taste. You can add a bit more than suggested in this recipe to achieve your desired taste
- Serve hot with croutons or toasted and buttered wholemeal slices of bread
