Creamy Homemade Potato Soup: Comfort in a Bowl
There's nothing quite like a bowl of homemade potato soup to warm you up on a chilly day. This classic recipe is not only comforting but also incredibly versatile and easy to make. Perfect for a hearty lunch or a cozy dinner, this creamy potato soup needs only two main ingredients; Potatoes and onions!
I have not listed down the ingredients and their necessary amounts here as there is no rigid way to make this soup. Just go through the simple way of making it as mentioned below and set to work;
You will need:
- Tender potatoes - Baby potatoes are best for this recipe
- Onions
- Salt and pepper powder
- Water
Let's make it:
- Boil the potatoes until tender - I take about 200g of small potatoes. You can adjust this quantity according to the number of servings required.
- Peel the skin off, cut them into chuncks and, keep aside
- Chop a large onion or two medium onions and saute in a little olive oil. Any cooking oil would do
- Now drop the potatoes into the pan
- Give a good stir for a few minutes until the potatoes are well coated with the juices of the onion
- Pour hot water until the potatoes are covered
- Cover and simmer for 15mins
- Now tip the whole lot into a blender and whiz until smooth and creamy
- Pour back into the pot. Add more hot water
- Season with salt and pepper
- Simmer for another 15/20mins and finally garnish with some thinly chopped spring onions
- Done!
